Position Summary:

The primary purpose of this position is to supervise and instruct employees who prepare and serve meals; this includes, but is not limited to, supervision and instruction in maintaining high standards of food preparation, presentation and service, sanitation, housekeeping and safety, as well as maintenance and care of equipment. Performs all duties as assigned to maintain a sanitary environment. Duties must be in accordance with federal, state and local standards, guidelines, and regulations that govern Bethany Lutheran Health Services and as may be required by the Dining Services Director, Administrator or Registered Dietitian to ensure that the highest degree of quality care is maintained at all times.

Qualifications:

  • Must be able to read/write, follow verbal instructions and interpret written directions on standard menus and recipes.

  • Must take required study courses.

  • Must be able to delegate, evaluate and supervise staff.

  • Must be able to make simple adjustments to recipes to ensure appropriate and necessary quantities.

  • Must be able to train employees in proper sanitation procedures.

  • Must be able to read and speak the English language in an understandable manner.

  • Prefer one-three years’ experience in supervisory service position.

  • Computer knowledge desired.

  • Must have health care experience preferably in long term care.

Essential Job Functions:

  • Supervise daily operation of food production and ware-washing staff.

  • Orient new staff and participate in the recruitment of new staff with Dining Service Director.

  • Monitor and assess work for purposes of performance evaluation and disciplinary actions.

  • Supervise food preparation to ensure that meals are nutritional, appetizing, prepared appropriately and served in a timely manner.

  • Completes weekly grocery orders.

  • Checks in and stocks groceries and supplies.

  • Maintain sanitation practices in Dining Service department – review cleaning sheets and address staff.

  • Attend and participate in in-service education.

  • Maintain and update instructional forms, information checklists and Dining Service meal tickets.

  • Fill in shifts as needed. Answer phone calls in a timely manner.

  • Maintains Safety Data Sheets (SDS) for all chemicals used or stored in the Dining Service Department.

  • Other duties as assigned. Participate in safety meetings and in meal planning.

  • Works with other departments on special food related events.

  • Works with Therapy/Nursing coordinating adaptive dishware.

  • Keeps meal tickets, diet list and seating charts updated.

  • Maintain current records of departmental expenditures and assure adequate financial records and cost reports.
  • Participate in care plans in Dining Service Directors absence.
  • Participate in annual review on each employee’s skills with regards to appropriate serving, cooking, sanitation, and keep records on each employee.

Physical Requirements:

  • Must be able to move intermittently throughout the day.

  • Must be able to push, pull, move and/or lift a minimum of 50 lbs. to a minimum of 3ft.

  • Must be able to assist in the evacuation of residents in an emergency situation.

  • Must be able to stoop, reach for, bend, lift, and carry food and equipment.

  • Must be able to tolerate extremes of heat and cold.

  • Exposure to chemicals used to clean and sanitize work area and equipment.
